Salade d'asperges rôties
Ingredients

1 x bundle of asparagus
1 tsp salt
1 tsp pepper
2 tbsp Olive Oil
¼ cup grape tomatoes
1 tsp fresh parsley
1 tsp minced garlic
½ tsp salt
½ tsp pepper
¼ cup Yo Mama’s Olive Oil
¼ lemon
1 x burrata cheese
1 tbsp balsamic glaze
Garnish: black pepper
Instructions
INSTRUCTIONS
- Place the bundle of asparagus on a baking tray and season with salt and pepper
- Drizzle with Yo Mama’s Olive oil and massage the oil into the asparagus
- Roast at 400 F for 15 minutes
- While the asparagus is roasting, slice grape tomatoes in half lengthwise and roughly chop the parsley
- Place the asparagus on a plate and add the tomatoes and burrata
- Garnish with parsley and black pepper
- Drizzle with balsamic glaze
