Tacos aux pois chiches Buffalo Ranch

Ingredients

1 x 540ml can chickpeas 

¼ tsp salt

¼ tsp black pepper

¼ cup buffalo sauce

⅓ cup + ½ cup Yo Mama’s Ranch Dressing

9 x corn tortillas

9 tbsp truffle aioli

9 baby lettuce leaves

9 tbsp microgreens

½ small red onion, sliced

⅓ cup crumbled feta cheese


 

Instructions

  1. In a bowl, combine the chickpeas, salt, pepper, buffalo sauce and ⅓ cup Yo Mama’s Ranch Dressing
  2. Place Chickpeas on a baking tray and bake at 350F for 30 mins until crispy 
  3. On each tortilla, add 1 tbsp truffle aioli, 1 baby lettuce leaf, 1 tbsp micro greens, 2 slices red onion and a drizzle of Yo Mama’s Ranch Dressing 
  4. Repeat this step on the remaining tortillas 
  5. Top each taco with feta cheese and the remaining Yo Mama’s Ranch Dressing 
  6. Enjoy!
