Poêlée de légumes rosés pour le petit-déjeuner

Ingredients

2 zucchinins

2 eggplants

½ orange bell pepper

2 tbsp olive oil

1 small white onion

3 garlic colves minced

1 tsp salt

1 tsp pepper

1.5 cups of canned, diced tomatoes.

1 jar of Yo Mama's Rosé

4-5 Eggs

fresh parsley

Instructions

  1. Cube 2 zucchinis, 2 eggplants and 1 white onion.
  2. Slice orange bell pepper.
  3. Add olive oil to large pan.
  4. Add onion, garlic, eggplant, salt, pepper, zucchini and bell pepper to pan.
  5. Cover pan and let veggies soften for 5 minutes.
  6. Add tomatoes and Rosé Sauce to veggie mixture. 
  7. Let simmer for 7 minutes.
  8. Top mixture with 4-5 eggs.
  9. Cover and cook for 10 minutes or until eggs are cooked.
  10. Top with fresh parsley, and enjoy!
