Greek Bowl

Ingredients

2 cups dry white rice

16 ounces meatballs

1 pint cherry tomatoes, halved

3 baby cucumbers, sliced

1 small red onion, sliced

1 cup feta cheese

Tzaziki Sauce

  • 1 cup yogurt
  • ¼ cup grated cucumber
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon chopped fresh mint
  • 1 clove garlic, minced
  • ½ teaspoon salt

Yo Mama Greek Dressing, to serve

Instructions

  1. Cook the rice according to the package instructions.
  2. Cook the meatballs according to the package instructions.
  3. Prepare the tzatziki sauce. Mix all the ingredients in a medium bowl.
  4. Assemble the bowls. Place a bed of rice in each bowl. Top with meatballs, tomatoes, cucumbers, red onion, feta, and tzatziki. Drizzle with Yo Mama Greek Dressing.
