Crêpe soufflée au vin rosé
Ingredients
¾ Cup All Purpose Flour
½ Tsp Salt
¾ Cup Milk
3 Eggs
1 Tbsp Olive Oil
1 ½ Cups Cherry Tomatoes
½ Tsp Salt and Pepper
¾ Cup Pancetta
½ Jar Yo Mama’s Rosé Sauce
2 Tbsp Butter
⅓ Cup Fresh Arugula
¼ Cup Grated Parmesan
Instructions
- Place a 12” cast iron skillet in the oven as it preheats to 450F
- In a large bowl, combine the flour, salt, milk and eggs
- Once the oven preheats, remove the hot skillet from the oven and add the butter. Coat the skillet evenly with butter
- Pour in the pancake batter and place into the oven
- Bake at 450F for 20 minutes
- While the pancake bakes, in a medium pan on medium heat, add olive oil
- Once the pan is hot, add in the cherry tomatoes, salt and pepper, pancetta, and Yo Mama’s Rosé sauce
- Mix until combined and let simmer for 5 minutes
- Once the pancake puffs up and is golden brown, remove from the oven
- Place tomato mixture on top of the pancake and garnish with fresh arugula and grated parmesan
- Serve directly in the skillet and enjoy!
