Bruschetta à la marinara
Ingredients
- Season the chicken breast with salt and pepper
- Roughly chop the vine tomatoes
- Roughly chop basil
- Slice garlic cloves thinly
- Combine tomatoes, basil, and garlic in a bowl
- Pour 1 tbsp of balsamic vinaigrette into the bowl and mix thoroughly. Set aside
- Evenly spread 3 tbsp avocado oil into a 9” x 13” baking dish
- Place chicken breast into baking dish and top each breast with 2 tbsp Yo Mama’s original marinara sauce
- Top each chicken breast with ⅔ cup mozzarella cheese
- Evenly coat the chicken breasts with the vegetable and balsamic mixture
- Drizzle the chicken with an additional ¼ cup of balsamic vinaigrette
- Bake at 400F for 25 minutes
- Serve over hot white rice and drizzle with more balsamic vinaigrette, if desired
