2 tbsp olive oil
½ cup portobello mushrooms
½ cup spinach
1 tsp salt
1 tsp pepper
4 x eggs
¼ cup sliced cherry tomatoes
¾ avocado
3 x strips bacon
1 tbsp Yo Mama’s Classic Ketchup
Instructions
INSTRUCTIONS
- In a medium pan on medium heat, add in olive oil and mushrooms. Cook the mushrooms for 2 mins
- Add in the spinach, salt and pepper and sauté until the spinach is cooked down
- Add in 4 eggs and scramble the mixture until the eggs are cooked
- Transfer the egg mixture into a bowl and top with cherry tomatoes, avocado and bacon
- Drizzle with Yo Mama’s Classic Ketchup and enjoy!
