Panzanella Salad
Ingredients
1 x small loaf of sourdough bread
3 tbsp olive oil
2 tbsp shredded parmesan
1 tsp parsley
2 x mini cucumbers
½ cup cherry tomatoes
½ cup chopped red onion
1 cup sweet peppers, sliced
1 cup Yo Mama’s Italian Dressing
Instructions
- Slice the sourdough bread into cubes and place into a large salad bowl
- Drizzle with olive oil and sprinkle with parmesan cheese and parsley. Mix thoroughly
- Place the bread into a baking pan and bake at 350F for 15 minutes or until golden
- While the bread is toasting, slice the cucumbers into coins and set aside
- Slice the cherry tomatoes in half and set aside
- Out of the oven, place the bread into a bowl and add in the cucumbers, tomatoes, red onion, sweet peppers and Yo Mama’s Italian Dressing
- Mix thoroughly
- Place into a salad bowl and enjoy!
