Roasted Veggie Hummus
Ingredients
1 x zucchini
1 x bell pepper
1 x eggplant
1 x red onion
11 x asparagus spears
½ cup button mushrooms
1 tsp salt 1 tsp pepper
½ cup Yo Mama’s Avocado Oil
1 cup hummus
Instructions
- Slice the zucchini, bell pepper, red onion and eggplant and set aside
- Place the zucchini, bell pepper, eggplant, red onion, asparagus and mushrooms onto a baking tray
- Season generously with salt and pepper
- Drizzle with Yo Mama’s Avocado oil Roast at 380F for 35 minutes
- Out of the oven, organize the vegetables onto a board and serve with hummus
- Enjoy!
