Greek Pilaf Salad
Ingredients
INGREDIENTS
6 x mini sweet peppers
2 x medium cucumbers
⅓ cup diced red onion
½ cup cherry tomatoes
⅓ sliced cup black olives
2 tbsp fresh dill
1.5 cups rice pilaf
½ tsp salt
½ tsp pepper
½ cup Yo Mama’s Greek Dressing
¼ cup crumbled feta cheese
Instructions
INSTRUCTIONS
- Slice the mini sweet peppers into small bite sized pieces and set aside
- Slice the cucumbers into coins and then into quarters and set aside
- In a large salad bowl, combine the cucumbers, sweet peppers, red onion, cherry tomatoes, black olives, fresh dill and rice pilaf
- Season with salt and pepper
- Drizzle Yo Mama’s Greek Dressing onto the salad and mix thoroughly
- Top the salad with crumbled feta cheese
- Enjoy!
