Greek Bowl
Ingredients
2 cups dry white rice
16 ounces meatballs
1 pint cherry tomatoes, halved
3 baby cucumbers, sliced
1 small red onion, sliced
1 cup feta cheese
Tzaziki Sauce
- 1 cup yogurt
- ¼ cup grated cucumber
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh dill
- 1 teaspoon chopped fresh mint
- 1 clove garlic, minced
- ½ teaspoon salt
Yo Mama Greek Dressing, to serve
Instructions
- Cook the rice according to the package instructions.
- Cook the meatballs according to the package instructions.
- Prepare the tzatziki sauce. Mix all the ingredients in a medium bowl.
- Assemble the bowls. Place a bed of rice in each bowl. Top with meatballs, tomatoes, cucumbers, red onion, feta, and tzatziki. Drizzle with Yo Mama Greek Dressing.
