Chianti Wine Cream Cheese Enchiladas
Ingredients
250g cream cheese
2 tbsp + ½ cup Yo Mama’s Chianti Wine Sauce
⅓ + 1 cup shredded mozzarella cheese
⅓ cup parmesan cheese
¼ tsp salt
¼ tsp pepper
⅓ cup chopped spinach leaves
7 x small corn tortillas
2 tbsp jalapeno slices
Instructions
- In a bowl, combine the cream cheese, 2 tbsp Yo Mama’s Chianti Wine Sauce, ⅓ cup mozzarella cheese, ⅓ cup parmesan cheese, salt and pepper and spinach leaves. Mix using a hand mixer on low speed until all ingredients have thoroughly combined
- Place 2 tsp of the cream cheese mixture into a corn tortilla and roll. Place into a baking dish.
- Repeat previous step with all tortillas
- Top enchiladas with ½ cup Yo Mama’s Chianti Wine Sauce, 1 cup shredded mozzarella and jalapenos
- Bake at 350F for 20 minutes
