Marinara Bruschetta

Ingredients

  1. Season the chicken breast with salt and pepper 
  2. Roughly chop the vine tomatoes 
  3. Roughly chop basil
  4. Slice garlic cloves thinly 
  5. Combine tomatoes, basil, and garlic in a bowl
  6. Pour 1 tbsp of balsamic vinaigrette into the bowl and mix thoroughly. Set aside
  7. Evenly spread 3 tbsp avocado oil into a 9” x 13” baking dish 
  8. Place chicken breast into baking dish and top each breast with 2 tbsp Yo Mama’s original marinara sauce 
  9. Top each chicken breast with ⅔ cup mozzarella cheese 
  10. Evenly coat the chicken breasts with the vegetable and balsamic mixture 
  11. Drizzle the chicken with an additional ¼ cup of balsamic vinaigrette 
  12. Bake at 400F for 25 minutes
  13. Serve over hot white rice and drizzle with more balsamic vinaigrette, if desired
