Roasted Veggie Hummus

Ingredients

1 x zucchini

 1 x bell pepper 

1 x eggplant 

1 x red onion 

11 x asparagus spears 

½ cup button mushrooms 

1 tsp salt 1 tsp pepper 

½ cup Yo Mama’s Avocado Oil 

1 cup hummus

Instructions

  1. Slice the zucchini, bell pepper, red onion and eggplant and set aside 
  2. Place the zucchini, bell pepper, eggplant, red onion, asparagus and mushrooms onto a baking tray 
  3. Season generously with salt and pepper 
  4. Drizzle with Yo Mama’s Avocado oil Roast at 380F for 35 minutes 
  5. Out of the oven, organize the vegetables onto a board and serve with hummus 
  6. Enjoy!
