Roasted Butternut Squash Pasta
Ingredients
INGREDIENTS
2 cups butternut squash, cubed
1 tsp salt
1 tsp pepper
2 tbsp olive oil
½ cup pecans
⅓ cup pine nuts
400g of butternut squash pasta or your pasta of choice
1.5 cups Yo Mama’s Ranch Dressing
2 tbsp goat cheese
Instructions
INSTRUCTIONS
- In a bowl, season the butternut squash with salt and pepper
- Drizzle with olive oil and mix thoroughly
- Place the squash onto a baking tray and add in the pecans and pine nuts
- Roast at 400F for 30 mins
- While the squash is roasting, boil the pasta in salted water until al dente
- Place the cooked pasta into a serving bowl
- Top the pasta with the roasted squash and nuts and drizzle with Yo Mama’s Ranch Dressing
- Toss the pasta until it’s evenly coated in sauce
- Top the pasta with goat cheese
- Enjoy!
