Lemon Ricotta Avocado Oil Pasta
Ingredients
375g spinach fettuccine
⅓ cup Yo Mama’s Avocado Oil
6 garlic cloves
1 tsp salt
1 cup raw spinach
½ cup green peas
½ lemon
1 cup ricotta cheese
1 tsp black pepper
Instructions
- Boil spinach fettucine in salted water until al dente
- In a medium pan, add in Yo Mama’s olive oil, garlic cloves and salt. Cook until fragrant
- Add in spinach and green peas and sauté for 2 minutes
- Add in juice from ½ lemon and ricotta cheese and mix thoroughly
- Toss in the fettucine and evenly coat in the ricotta and oil mixture
- Garnish with black pepper
