Greek Veggie Pitas

Ingredients

3 x mini cucumbers

1 block feta cheese

2 cups romaine lettuce

¼ cup red onion (chopped)

¼ cup grape tomatoes

½ cup Yo Mama’s Greek Dressing

3 x whole wheat pitas

3 tbsp tzatziki sauce

6 x fresh parsley stems

1 tsp black pepper


 

Instructions

  1. Slice the mini cucumbers into sticks lengthwise and set aside 
  2. Slice the feta block into sticks lengthwise and set aside 
  3. In a bowl, combine the romaine lettuce, red onion, grape tomatoes and Yo Mama’s Greek Dressing. 
  4. Toss salad. 
  5. To each whole wheat pita, place ⅔ cup of the whole wheat mixture, cucumbers, feta cheese, 1 tbsp tzatziki sauce, 2 parsley stems Sprinkle with black pepper
  6.  Enjoy as is or wrapped with parchment paper and twine Enjoy! Yields 3 Greek Pitas
