Greek Potato Salad
Ingredients
2 cups red and yellow baby potatoes
¼ cup sliced red onion
¼ cup capers
1 tbsp fresh dill
1 tsp dried parsley
¼ tsp salt
¼ tsp black pepper
¼ lemon, juice
¼ cup Yo Mama’s Greek Dressing
2 heaping tbsp tzatziki
Instructions
- Boil potatoes until fork tender
- Strain potatoes and place in a large salad bowl
- To the potatoes, add sliced red onion, capers, dill, parsley, salt, pepper and lemon juice
- Top with ¼ cup Yo Mama’s Greek dressing
- Toss potato salad until evenly coated in dressing
- Fold in tzatziki sauce to coat salad
- Enjoy!
