Cheesy Maple Bacon Ranch Potatoes
Ingredients
1 cup crumbled bacon
1 tbsp maple syrup
2 cups red skin potatoes
1 cup acorn squash, sliced
1 tsp salt
1 tsp pepper
1 cup Yo Mama’s Ranch Dressing
1 cup shredded mozzarella cheese
1 tbsp chopped chives
Instructions
- In a bowl, combine the crumbled bacon and maple syrup. Set aside
- Chop the red skin potatoes in half and place in a bowl with the squash
- Season with salt and pepper
- Pour in Yo Mama’s Ranch Dressing and mix thoroughly
- Pour the mixture into a baking dish and sprinkle the crumbled bacon on top
- Bake at 400F for 45 mins
- Out of the oven, sprinkle with mozzarella cheese and bake for an additional 5 mins until the cheese melts
- Once the cheese is melted, garnish with fresh chives
- Enjoy!
