Caesar Roasted Chickpea Salad
Ingredients
1 green bell pepper
¼ small red onion
3 cups chickpeas
1 cup pancetta, cubed
1 tsp salt
1 cup Yo Mama’s Caesar Dressing
Instructions
- Slice bell pepper into thin strips and set side
- Slice red onion and set aside
- Set the chickpeas and pancetta on a baking tray and season with salt. Gently mix
- Bake at 400F for 30 minutes
- Out of the oven, pour chickpeas and pancetta into a salad bowl
- Top with bell pepper, red onion and Yo Mama’s Caesar Dressing. Mix until evenly coated in dressing.
