Yo Mama's Zesty Frittata

Serves 2

  • 1 tbl butter

  • 1 tbl oil

  • 1 redskin potato, washed and cut into bite-sized pieces

  • ¼ cup chopped leek or red onion

  • ½ cup chopped broccoli

  • ¼ green bell pepper, chopped

  • ¼ cup Yo Mama’s Zesty Sesame, divided

  • 2 eggs

  • 1 Tbl heavy cream or water

  • Salt

  • Pepper

  1. If using a cast iron skillet, begin warming your broiler.

  2. Meanwhile, heat butter and oil in cast iron skillet over your stove’s medium heat.

  3. Add potatoes and leeks or onions and cook for 5 minutes, stirring occasionally.

  4. Add broccoli and green bell pepper and continue cooking for another 3-5 minutes until vegetables are tender.

  5. Lower temperature to low and stir in 1/8 cup of Yo Mama’s Zesty Sesame

  6. Beat eggs with cream or water; season with salt and pepper and pour over vegetables. Cover with lid and allow to cook for 3 minutes.

  7. Remove lid and either flip frittata over to cook other side or else side under a preheated broiler until top is brown.

  8. Drizzle with remaining 1/8 cup Yo Mama’s Zesty Sesame and serve immediately
