Serves 21 tbl butter
1 tbl oil
1 redskin potato, washed and cut into bite-sized pieces
¼ cup chopped leek or red onion
½ cup chopped broccoli
¼ green bell pepper, chopped
¼ cup Yo Mama’s Zesty Sesame, divided
1 Tbl heavy cream or water
If using a cast iron skillet, begin warming your broiler.
Meanwhile, heat butter and oil in cast iron skillet over your stove’s medium heat.
Add potatoes and leeks or onions and cook for 5 minutes, stirring occasionally.
Add broccoli and green bell pepper and continue cooking for another 3-5 minutes until vegetables are tender.
Lower temperature to low and stir in 1/8 cup of Yo Mama’s Zesty Sesame
Beat eggs with cream or water; season with salt and pepper and pour over vegetables. Cover with lid and allow to cook for 3 minutes.
Remove lid and either flip frittata over to cook other side or else side under a preheated broiler until top is brown.
Drizzle with remaining 1/8 cup Yo Mama’s Zesty Sesame and serve immediately
