Yo Mama's Vegetables with Redskin Potatoes

Serves 2

  • 1/2 bunch Asparagus, cut into bite size pieces

  • 1 Zucchini, cut in bite-size slices

  • ½ Onion, sliced

  • 1 Bell pepper, cut in slices

  • 3 Tbl. Yo Mama’s Bold Balsamic

  • 1/2 tsp. oregano

  • 1 clove garlic, pressed

  • freshly ground salt and pepper

  • Cooked redskins, mashed with butter and milk/cream

  1. Warm oven to 400 degrees Fahrenheit.

  2. Place first seven ingredients in broiler pan. Stir together until combined.

  3. Bake vegetables are tender: about 12-15 minutes, stirring halfway through cooking time.

  4. Serve alongside mashed redskins.
