Yo Mama's Vegetables with Redskin Potatoes

Serves 2

1/2 bunch Asparagus, cut into bite size pieces
1 Zucchini, cut in bite-size slices
½ Onion, sliced
1 Bell pepper, cut in slices
3 Tbl. Yo Mama’s Bold Balsamic
1/2 tsp. oregano
1 clove garlic, pressed
freshly ground salt and pepper
Cooked redskins, mashed with butter and milk/cream
    1. Warm oven to 400 degrees Fahrenheit.

    2. Place first seven ingredients in broiler pan. Stir together until combined.

    3. Bake vegetables are tender: about 12-15 minutes, stirring halfway through cooking time.

    4. Serve alongside mashed redskins.
