Yo Mama's Vegetable Scramble

Serves 3

3 Brussels sprouts, ends removed, remainder quartered
1/2 zucchini, cut into bite-sized pieces
2 tablespoons red onion, diced
3 mushrooms, washed and chopped
2 oz. Water chestnuts, diced
1/2 bell pepper, chopped
Olive oil
Salt and pepper
2-3 tablespoons Yo Mama’s Zesty Sesame
    1. Place Brussels sprouts in a skillet, add a little water to cover the bottom of the pan, cover with a lid and steam over medium heat until mostly tender--about 10 minutes.

    2. Add zucchini, onion, mushrooms, water chestnuts, and bell pepper to skillet.

    3. Stir in enough olive oil to coat the vegetables.

    4. Grind salt and pepper over all and saute until the bell peppers are tender--about 5 minutes.

    5. Drizzle Yo Mama’s Zesty Sesame over the vegetables, stir to combine, and allow to warm for a minute before serving.
