Yo Mama's Spa Day Salad
Serves 46 cups mixed greens
1 Red pepper, chopped
1 Fresh mango, chopped
12 ounces mandarin orange slices
4 Tbl sliced almonds
2-4 pieces Wild Salmon (adjust amount according to your appetites)
8-10 tablespoons Yo Mama’s Bold Balsamic dressing
Place salmon pieces in skillet over medium heat.Drizzle 1-2 tablespoons Yo Mama’s Bold Balsamic dressing over the top.When bottom and sides are cooked through (3-5 minutes), flip over and cook second side (2-3 minutes). When salmon is flaky-tender, remove from skillet and drizzle top with another 1-2 tablespoons Yo Mama’s Bold Balsamic.
While salmon is sautéing, place mixed greens, red pepper, mango, and mandarins in a large bowl.Toss with 6 tablespoons Yo Mama’s Bold Balsamic dressing.Divide the salad into 4 servings; top each with ¼ of the salmon pieces and 1 tablespoon of almonds.
