Yo Mama's Rice and Bean Soup

Serves 6

  • 1 Tbl olive oil

  • 2 tbl butter, divided

  • ½ red onion, diced

  • 12 oz. carrots, diced

  • 2 cloves garlic, minced

  • 1 cup brown rice

  • 5 cups chicken or vegetable stock or broth

  • 3 cans black beans, drained

  • ¼ cup Yo Mama’s Marinara Magnifica

  • 2 Tbl. Red wine

  • Salt and pepper to taste

  1. Heat oil and 1 tablespoon of the butter in a large pot over medium heat.

  2. Saute onion and carrot until tender.

  3. Add garlic and stir fry for one minute before adding rice and broth.

  4. Bring to a boil, cover, reduce heat to medium, and allow to simmer for 45 minutes.

  5. Add black beans, Yo Mama’s Marinara Magnifica,and red wine, return to a simmer and allow to cook an additional 15-20 minutes. Before serving, add remaining tablespoon of butter and season with salt and pepper.

  6. Serve with cheese and sour cream if desired.
