Yo Mama's Rice and Bean Soup
Serves 61 Tbl olive oil
2 tbl butter, divided
½ red onion, diced
12 oz. carrots, diced
2 cloves garlic, minced
1 cup brown rice
5 cups chicken or vegetable stock or broth
3 cans black beans, drained
¼ cup Yo Mama’s Marinara Magnifica
2 Tbl. Red wine
Salt and pepper to taste
Heat oil and 1 tablespoon of the butter in a large pot over medium heat.
Saute onion and carrot until tender.
Add garlic and stir fry for one minute before adding rice and broth.
Bring to a boil, cover, reduce heat to medium, and allow to simmer for 45 minutes.
Add black beans, Yo Mama’s Marinara Magnifica,and red wine, return to a simmer and allow to cook an additional 15-20 minutes. Before serving, add remaining tablespoon of butter and season with salt and pepper.
Serve with cheese and sour cream if desired.
