Yo Mama's Mediterranean-Style Salad

Servings: 4 For the Salad...

  • Mixed greens

  • Green olives

  • Feta cheese

  • Sliced Mushrooms

  • Green onions

  • Yo Mama’s Bold Balsamic dressing

For the Potato salad

  • 1 Cup cooked redskin potatoes

  • ½ tsp balsamic vinegar

  • 1/3 cup mayonnaise

  • 1 tsp. Dijon mustard

  • 1 dill pickle slice, chopped

  • Salt and pepper to taste

  1. Assemble potato salad by mixing all ingredients in a bowl.

  2. Once potato salad is ready, keep chilled until ready to use.

  3. For the salad, place first 5 ingredients in a large bowl. When ready to serve, toss with Yo Mama's Bold Balsamic dressing and divide onto serving plates.

  4. Place a scoop of potato salad in the center of each serving.
