Yo Mama's Makeover Pie

Serves: 6--8 For the meat:

2 lb. ground turkey
¼ cup diced red onion
2 Tbl red wine vinegar
1 cup Yo Mama’s Marinara Magnifica
1 tsp. Thyme
1 tsp. Basil
1 tsp. Oregano
½ tsp. Parsley
Salt and pepper to taste
¾ cup sour cream
1-1/2 cups grated cheese
A splash of hot or cold brewed coffee, if it is on hand and the spirit hits you

    For the potatoes:

3-4 pounds Redskin potatoes, washed but not peeled
    6-8 Tbl. Butter
Enough Milk to get a creamy consistency
    ¼ cup Sour cream
    Salt and pepper to taste

      For the vegetables:

1 small package baby Carrots, diced
      1 bag frozen Peas
      3 Tbl. Butter
      Salt and pepper to taste

        1. Wash potatoes, cut into cubes, place in a large pot, cover with water and a lid. Bring to a boil over high heat, then reduce heat to medium and allow to cook until potatoes are tender (approximately 20 minutes).

        2. Place ground turkey and diced onion in a large skillet or pot. Cook over medium heat, turning periodically until no pink remains in the turkey.

        3. Stir in red wine vinegar, Yo Mama’s Marinara Magnifica, the spices, sour cream, cheese, water, and coffee (if using) and allow to heat over low heat while preparing the rest of the dish.

        4. Place carrots in pot, cover with water, and bring to boil over high heat. Add peas to pot and allow to come to a 2nd boil. Lower heat to medium and allow to cook until vegetables are tender (approximately 7 minutes).

        5. When potatoes are tender, drain water and return them to the pot. Add butter and return to stove over low heat. Using a hand masher, smash the potatoes with the butter. Add milk, sour cream, salt and pepper until you achieve a creamy consistency and desired seasoning.

        6. When vegetables are tender, drain. Return to pot and add butter, salt, and pepper, stirring until butter is melted.

        7. Serve the three components separately, or else layer ground turkey mixture, vegetables, and potatoes in a large casserole dish.
