Yo Mama's Lentil Soup

Serves 4, which is obviously not enough to feed all the paying guests you will be serving at your charitable fundraiser. Assume you will need to multiply all the ingredient quantities by 10 or 20 or 30, which of course means you will need to borrow or buy a kettle of remarkable size.

1 cup dry lentils (soak them for a couple of hours before preparing the soup if you like)
1/4 of a red onion, diced
2 carrots, diced
2 tablespoons butter
4 cups vegetable broth
1/4 teaspoon turmeric
1/2 teaspoon thyme
1/2 cup Yo Mama’s Marinara Magnifica
Salt and pepper
Sour cream (optional)
Cheddar cheese (optional)
    1. Melt butter in a medium-sized pot over medium heat.

    2. Saute onion and carrots in butter until tender (5-10 minutes).

    3. Add broth, lentils, turmeric, and thyme to pot. Allow to come to a boil, then lower heat and simmer for half an hour until lentils are tender.

    4. Stir in Yo Mama’s Marinara Magnifica and allow to heat through.

    5. Season to taste with salt and pepper.

    6. Top soup with sour cream and cheddar cheese if desired.

    Serving suggestion: pair with sourdough bread and a salad.
