Yo Mama's Ground Bison over Mashed Cauliflower

Serves 3-4

  • 2 head of cauliflower, diced

  • 1 cup of (preferably homemade) beef or chicken bone broth

  • 2 garlic cloves

  • pepper

  • 1-2 Tbl. butter and/or olive oil

  • 1/2 bell pepper, diced

  • 2 Tbl. onion, diced

  • 1 pound ground bison

  • 1/2 jar Yo Mama's Burgandy Wine Marinara

  • salt and pepper

  • 3/4 to 1 cup cheddar or Mexican cheese

Cook cauliflower pieces in a pot with broth, minced garlic, and some ground black pepper until quite tender--about 20 minutes. Mash with a hand masher or food processor or blender until smooth. Meanwhile, saute bell pepper and onion in butter or oil until tender--about 5 minutes. Add bison to skillet and cook until no pink remains. Stir in Yo Mama's Burgandy Wine Marinara, salt and pepper to taste, and cheese. Serve meat next to or atop mashed cauliflower along with a vegetable of your choosing.
