Yo Mama's Egg Cups

(Idea comes courtesy of a 2014 Southern Living Magazine recipe) Serves 4-8

  • Fresh spinach, torn into small pieces

  • 8 Tbl. Shredded cheese (Monterey Jack, Cheddar, Italian, Swiss… your choice)

  • 8 eggs

  • 16 Tbl. Yo Mama’s Bellisima Basil Marinara

  • 8 Tbl. Heavy cream

  • Salt and pepper

  1. Heat oven to 350 degrees Fahrenheit.

  2. Grease bottom and sides of 8 ramekins and place on a baking sheet.

  3. Place torn spinach leaves in a thin layer to cover the bottom of each ramekin.

  4. Add about 1 Tbl. cheese--shredded or chunks-- to each ramekin to cover spinach.

  5. Break egg into each ramekin. Leave the yolk intact.

  6. Cover each egg with 2 Tbl. Yo Mama’s Bellisima Basil Marinara and 1 Tbl. heavy cream.

  7. Bake for 20 minutes, until egg is cooked to taste.

  8. Season to taste with salt and pepper.
