Yo Mama's Egg and Vegetable Delight

Serves 1

  • ¼ zucchini, chopped

  • ¼ bell pepper, chopped

  • 1 green onion, chopped

  • 1 Tbl. Yo Mama’s Basil Marinara

  • 2 eggs

  • 1 Tbl. Parmesan cheese

  • Salt and pepper

  1. Saute the vegetables in a little butter or olive oil until tender. Add Yo Mama’s Basil Marinara and warm through. Set aside.

  2. Beat eggs with a little water. Cook over medium heat.

  3. Plate eggs and vegetables and sprinkle with Parmesan cheese.

  4. Add salt and pepper to taste.
