Yo Mama's Chicken Pad Thai

Servings: 2 Ingredients:

  • 1 (5.3 oz.) pouch Rice Noodles (available in Yo Mama's Asian Care Package)

  • 1 cup hot water

  • 2 Tbl. light olive oil + 1 tsp.

  • ½ tsp. sesame oil

  • 1 cup broccoli slaw (optional)

  • 2 green onions, chopped

  • 1 cup chicken, cooked and diced

  • 1 egg, beaten

  • 1 cup bean sprouts

  • 2-3 Tbl. plus more for the table Yo Mama’s Zesty Sesame dressing (included in Asian Care Package)

  • 2 Tbl. chopped almonds or peanuts (optional)

  • Crushed red peppers (required for Papa C, optional for all others)

Directions: Soak Pad Thai Rice Noodles in hot water in a heat-safe bowl for 5 minutes. Drain, loosening noodles slightly with your fingers. Heat olive and sesame oils in large skillet over medium heat. Add broccoli slaw (if using) and softened noodles and stir for 2 minutes. Add chicken, chopped green onions, and 2-3 tablespoons of Yo Mama’s Zesty Sesame dressing and stir for 2 minutes. Push skillet contents to one side, pour 1 tsp. of olive oil in vacated spot and cook eggs for 1-2 minutes until cooked but not hard. Incorporate the eggs into the rest of the skillet contents. Add bean sprouts and heat to desired temperature. Serve warm with chopped nuts and crushed red peppers as a topping, if desired. Place a bottle of Zesty Sesame on the table for guests to use to add extra flavor at their discretion.
