Yo Mama's Artful Artichoke

Servings: 2-4 Ingredients

  • 1 Artichoke

  • 1/4 cup Mayonnaise

  • 1-1/2 tsp. olive oil

  • 2 tsp. Yo Mama’s Bold Balsamic dressing

  • 1/8 tsp. chipotle powder

  • 1/4 tsp. lime juice

NOTE: If you aren't familiar with artichokes, the leaves are not to be eaten: once cooked, the way to eat it is to pull off a leaf, run the broad end through your dip, then scrape the meaty part of the leaf between your front teeth to extract the innards. Once you get through the leaves, scrape the hairy part of the artichoke center out and discard. The soft green disk at the bottom, just above where the stem attached, is the fully edible artichoke heart that is delicious with your dip.


  1. Wash the artichoke, then trim the stem and slice about 1/2 to 3/4 inch off the top. (If desired for visual appeal, use a kitchen scissors to snip the pointy tips off the ends of the leaves.)

  2. Bring a pot of water to boil. Add artichoke and allow to gently boil for 25-40 minutes, depending on size of artichoke. (When petals near center are tender, it is ready).

  3. While the artichoke is cooking, prepare the dip by stirring together the mayonnaise, olive oil, Yo Mama's Bold Balsamic, chipotle powder, and lime juice.

  4. When the artichoke is cooked, remove from pot and let water drain off.

  5. Place on serving plate or platter and gently separate leaves into a nice display.

  6. Set dip in center, then follow instructions given above for eating.
