Serves: 22 small organic russet potatoes, washed
1-2 Tbl. Butter
Salt and pepper
2 Tbl. Yo Mama’s Marinara Magnifica
1/3 cup green bell pepper, chopped
1-2 Tbl. Green onion, chopped
1/2 Tbl. butter or olive oil
¼ cup shredded cheddar cheese
1 Tbl. Sour cream
Poke holes in top of potatoes. Bake in oven or microwave until tender.
While potatoes are baking, sauteed bell pepper and onion in butter or olive oil in a small saucepan over medium heat.
When potatoes are ready, cut them in half lengthwise. Break or mash potato inside its skin.
Top potatoes with butter. Allow to melt and use a fork to mash it in and combine with the filling.
Sprinkle on salt and pepper to taste.
Top with Yo Mama’s Marinara Magnifica, shredded cheddar, green onion, and bell pepper. Heat in warm oven until cheese is melted and the marinara is warm.
Just before serving, add dollop of sour cream to the top of each potato.
