Yo Mama's Acorn Squash

Serves 2 - 4

  • 1 acorn squash, washed and halved (stem to tip)

  • 2 Tbl soft butter

  • 1 Tbl Yo Mama’s Bold Balsamic

  • 1 Tbl maple syrup

  • Salt

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Scoop seeds out of the squash and discard.

  3. Place cut squash halves on greased broiler pan.

  4. Rub the exposed squash ‘flesh’ with 1 tablespoon butter and sprinkle with salt.

  5. Divide the remaining tablespoon of butter, putting half in the hollow of each squash half.

  6. Use a fork to poke holes throughout the squash flesh.

  7. Bake for 50-60 minutes until tender.

  8. Add Yo Mama’s Bold Balsamic and maple syrup to each squash hollow and serve.

  9. First-run or leftover, you can add cream and mash it up as a potato substitute.
