Power Plant Salad

Serves 2

Spinach
Green Leaf lettuce
½ cup cooked black beans (optional)
¼ cup chopped walnuts
2 Tbl Yo Mama’s Bold Balsamic
mandarins or clementines

    For Guacamole:

    1 avocado
    ½ lemon, juiced
    1/8 tsp. ground chipotle powder
    1/4 cup sliced olives
    Salt & pepper
      1. Make guacamole: scoop out avocado flesh and mash with a fork Mix in lemon juice and chipotle powder, then add salt and pepper to taste.

      2. Place desired amount of spinach and leaf lettuce on plates Top with [beans] and Yo Mama's Bold Balsamic dressing.

      3. Split guacamole between plates by placing a heaping scoop in the center of the salads.

      4. Garnish with mandarins or clementine segments.
