Chickpea Marinara Magnifica Over Couscous

Ingredients:

  • 2 tablespoons olive oil

  • 1⁄2 cup onion (diced)

  • 1(25 ounce) Yo Mama's Marinara Magnifica

  • 1 teaspoon salt

  • 1 (15 ounce) can chickpeas (drained)

  • 1⁄2 cup kalamata olive

  • 1 (10 ounce) box couscous

  • 1⁄2 cup parmesan cheese (grated)

Directions:

  1. Heat olive oil in sauce pan

  2. Saute onion in olive oil for 5 min--until tender

  3. Add Marinara Magnifica, chickpeas, olives, salt. Simmer for 20 minutes

  4. Prepare couscous according to package directions

  5. Serve Marinara Magnifica over couscous and top with parmesan cheese

  6. Add meat of choice (turkey meatballs, chicken, or go meatless)
