Almond Oat Bars

Yield: 24 bars

Ingredients:

1 ripe banana

½ cup butter, softened

½ cup sugar

1/3 cup almond butter

1 tsp. vanilla

1 egg

1 cup Yo Mama’s Gourmet Steel-Cut Oats

1 cup flour

½ tsp. soda

¼ tsp salt

1 ½ cups chocolate chips

Instructions:

1. Grease 9”x13” pan and set aside.

2. Preheat oven to 350o F.

3, Stir together flour, soda, and salt and set aside.

4. Place peeled banana in mixing bowl and beat until smooth. Add butter, sugar, and almond butter and continue mixing until well blended. Mix in vanilla and egg, then add Yo Mama’s Oats and blend. Carefully incorporate flour mixture. Lastly, stir in chocolate chips.

5. Turn mixture out into greased pan and bake for 25-30 minutes until light golden brown.

6. Cool. Cut into 24 bars.
